Olive vegetables fried rice with baked honey chicken

This recipe is passed down from my father and I've no idea whether foodstalls/restaurants have been selling this, but to be true, I never try it at any foodstalls/restaurants before.

Olive vegetables are chinese style of olives that are being processed to look different from the western olives. To make it sounds horrible and disgusting, it resembles bundles of hair that are wet and soggy. Yucks!

It's not pickled with acidic solution and left for fermentation which the western olives are processed.
The olive vegetable is therefore lack of the sourish taste and it's normally added to plain porridge for extra taste.

Recipe (serves 5-6)

Olive vegetables rice

  • 6-7 cups of overnight rice
  • 2 tbsp olive vegetables
  • 3 stripes of long beans, chopped into small pieces
  • 6 eggs
  • 1/2 clove of garlic
  • 3 slice of ginger, shredded
  • 3 small onions, chopped
  • 2 tbsp fish sauce
  • 3 tbsps soy sauce
  • 1 1/2 tbsp sugar
  • 2 tsp salt
  • 1 tsp sesame oil
  • dash of pepper

  1. Heat wok to high heat. Add in oil and stir fry ginger, onion and garlic till fragrant.
  2. Add in long beans and continue to stir-fry.
  3. Pour in slightly-beaten eggs and fry to half-cooked.
  4. Add in rice and stir fry till the egg mixture incorporated well with the rice.
  5. Add in other seasonings and continue the stir-frying process till the rice is fragrant.
  6. Dish out and serve warm.
