Nasi Lemak

I'm a real fan of nasi lemak, and whenever I enter any malay foodstalls/restaurants, I was completely sold to it!
I believe that the Malays should crown as the nasi-lemak expert as they are so adept at preparing the coconut rice, fried chicken, and most importantly, the sambal belachan chili!


The most original nasi lemak consists of mainly the coconut rice, small fried fish, hard-boiled eggs, fried anchovies with roasted peanuts, cucumber slices and sambal belachan chili. Right now, there are many variations in which nasi lemaks are prepared. Other accompaniments such as fried chicken, curry sotong, stir fried kangkong, and beef rendang are introduced that spiced up the whole dish!


Singapore version of nasi lemak is mainly encompassed with coconut rice, fried eggs, anchovies & peanuts, cucumber slices, sambal balachan chili, either fried fish or chicken. It can go as cheap as S$1.80 with fried chicken and in wide stalls, they charged you S$2 for the same dish. Indeed, it's very affordable!


Though it's accessible and inexpensive, the effort that counts the most and it's particularly affectionate to prepare the dinner for family from scratch.

I've my very own recipe for the fried chicken and it complemented well with the rice!


Recipe for fried chicken ( serves 5):

  • 5 boneless chicken thighs
  • 1 tbsp soy sauce
  • 1 1/2 tsp salt
  • 1 tsp sugar
  • 1 1/2 tbsp custard powder
  • 2 tsp curry powder
  • 2 tbsp ginger juice
  • 3 tbsp cornflour
  • few drops of sesame oil
  • dash of pepper


  1. Mix all ingredients together and marinate for 2-3 hours. Fry till golden brown.


Ingredients needed for sambal belachan paste


Tamarind juice


Sambal belachan paste


Dried anchovies


Cooked sambal belachan chili


Fried chicken




Nasi lemak set
