Awesome chewy and fudgy brownies muffins!

After undergoing 'experimental research' for the best chewy and fudgy brownies, I decided to come up with my own recipe by  modifications of some of the recipes which in my opinion gained desired outcomes.


From my past experiences in baking failed brownies, I picked up the skills and the control of proportion for  ingredients to reach the chewy and fudgy taste sensation.


Recipe ( makes 12 muffins)


  • 200g semi-sweet chocolate, coarsely chopped
  • 100g unsalted butter
  • 3 eggs
  • 1/2 cup brown sugar
  • 1 1/2  tsp vanilla essence
  • 1/2 cup cake flour
  • 2 tbsp unsweetened cocoa powder
  • 1 1/2  tsp baking powder
  • 1/4  tsp salt

  1. Preheat oven to 170C.
  2. Melt chocolate and butter in a microwave for 2 mins at medium heat, or over a double-boiler.
  3. Beat eggs and brown sugar till light and fluffy. Add in vanilla essence.
  4. Stir in chocolate mixture to the egg mixture and mix well.
  5. In another bowl, sift cake flour, cocoa powder, baking powder and salt.
  6. Add the flour mixture to the chocolate mixture and mix till well corporated.
  7. Transfer the batter to a lightly-greased muffin cups.
  8. Bake for 25 mins or until the toothpick comes out clean by inserting into the cake.


Melted butter and chocolate


Beat eggs, sugar and vanilla essence.


Stir in chocolate mixture to egg mixture


Sifted cake flour, baking powder and salt to the chocolate mixture.


Pre-baked brownies muffins.


Redolent brownies muffins fresh from the oven!




Best to serve it  with tea





Danny bro was making fun of me when he said that this was the most successful round for my brownies, jesting at my past failure.
