Mille Feuille is a french pastry which is also known as Napoleon in USA. It is traditionally made up of 3 layers of puff pastry and in between is spreaded on with creme patissiere (custard cream).
For my attempt, I'd tried on the traditional type of Mille Feuille with 3 layers puff pastry and creme patissiere but with a little variation with the toppings which I added fresh strawberries to it.
Puff pastry
Sift cake and bread flour. Set aside.
Cut butter into smaller pieces and refrigerate it for 1 hour.
Prepare cold water and add in salt.
Subsequently, add in sugar.
Mix in the butter coarsely with the flour till butter can visibly seen in the flour mixture.
Make a well in the center of the flour mixture.
Pour in the cold water (sprinkled with salt & sugar) into the well of flour mixture.
Mixed till it forms a dough. Refrigerate it for 1 hour.
After 1 hour of refrigeration, roll the dough into a rectangular shape.
Fold the dough to the centre in thirds.
Refrigerate it again for 1 hour. Repeat the process thrice.
Take out the dough from the fridge. Roll it out into a rectangle and cut it into 3 equal portions vertically.
Transfer the dough onto baking tray. Pricked holes into the dough to prevent it from puffing up during baking.
Sprinkle sugar evenly on it. Bake it for 45 mins at 180C.
Creme patissiere
Lightly beat the egg yolks.
Add sugar to the egg yolks.
Sift in cake flour to the egg mixture. Mix till it is creamy and set aside.
Heat milk, butter and vanilla essence in a pot just before it it boils (~80C)
Make sure that butter has melted.
Pour in milk mixture to egg yolks mixture.
Transfer the mixture to a clean pot and cooked at low heat while whisking it continuously.
Mixture will thicken when heated. It should look smooth without any clumps with the right consistency.
Cool puff pastry.
Spread creme patissiere and topped it with strawberries. Repeat the process for the next layer.
Place the uppermost layer with strip of papers.
Sift confectioner's sugar over the top. Remove the papers after sifting.

Herbal chicken- Dad suggests that herbs should be boiled to bring out the flavour before using the essence to steam the chicken.
